For this month's chocolate mac attack I wanted to try a unique ganache. I started with frozen strawberries, which I blended with water and balsamic vinegar. I boiled the mix on the stove until it reduced down to about 1/3 of the original amount. I then added 2 cups of brown sugar and a heaping spoonful of cocoa powder and 8 oz of Trader Joe's baking chocolate discs. Once that cooled a bit I added about 3/4 of a stick of unsalted butter. The result was exactly as I'd hoped, you taste strawberry first, and then the chocolate at the end.

Wow now that is creativity! I love it. That ganache sound so much like chocolate-dipped strawberries, and who doesn't love those? I love the combo especially with the tang of balsamic vinegar. Perfect mac for Mactweets this month! So happy to have you baking with us!
