Mac Tweets - Kick it up Challenge

My homage to the samoa girl scout cookie. Macarons with Fleur de sel caramel combined with Chocolate ganache and just a hint of rum. I heard Cora Carmody speak about the Technology Goddesses, a group that teaches girl scouts about technology. In honor of her coming to my Women's Network Meeting, and due to Mac Tweets having a boozy cookie challenge, I came up with this combo. I have to say I would put more than a hint of coconut rum in next time. My recipe was
2 Cups Heavy Cream
1/4 Cup Coconut Rum
2 1/4 Cups Chocolate Chips.

Next time I'd do double the rum as you really couldn't taste it unless you were really searching for it.

However they were still a chocolate, caramel delight!

What a day! We bbqed on the boat and watched the big bay boom, a series of four coordinated fireworks shows...it was amazing! To celebrate I made jello poke cupcakes, you poke the cake with a skewer and pour jello in the holes and let it set up. It is way late, so sweet dreams!

This weekend I grilled up some cupcakes, while wearing my new apron. I made this apron out of two half yards of fabric and used almost every last scrap of the pink and have just enough of the cupcake fabric to start saving squares for a scrap quilt!

European Vacation!

I went to Europe in March/April but I'm only getting to the photos now. Here are the highlights of my macaron hunt :)

On our bus tour we were supposed to shop in a department store, but the captain and I ventured out and found the famous Pierre Herme macarons. It was a sight to see!

If that's not a mouthful I don't know what is! Here is a bigger than life representation of the luxemburgerli, which are like swiss macarons. They are a bit more petite and thus look more filled than Parisian macarons but they probably have the same height of filling, just have a smaller cookie

I made some awesome gluten free cookies today. I just took the nestle tollhouse recipe and substituted peanut flour from trader joes for regular flour. The result, delicious peanutty cookies!

These macs are for this month's mac tweets, which was a baseball theme. I made mint chocolate ganache from mint in my garden. I was initially worried that you wouldn't taste any mint because I haven't tried flavoring cream before, but they are minty!

These macs are 100% flaxseed. I tinted and flavored them with pink lemonade koolaid powder from an envelope. When I opened the oven door on the first batch a waft of hot lemonade drifted out. These babies have a strong taste of lemonade and I hope to experiment with other kool aid flavors in the future.

Who can resist strawberries and chocolate?

For this month's chocolate mac attack I wanted to try a unique ganache. I started with frozen strawberries, which I blended with water and balsamic vinegar. I boiled the mix on the stove until it reduced down to about 1/3 of the original amount. I then added 2 cups of brown sugar and a heaping spoonful of cocoa powder and 8 oz of Trader Joe's baking chocolate discs. Once that cooled a bit I added about 3/4 of a stick of unsalted butter. The result was exactly as I'd hoped, you taste strawberry first, and then the chocolate at the end.

A second helping inspired by mac tweets

I have a cherimoya tree in my back yard so I thought is make some white chocolate ganache with a cherimoya base. I sprinkled the tajin on afterwards, as it tends to melt into stuff. I love tajin on cherimoyas and it was pretty interesting on a cookie!

My first MacTweets MacAttack!

I'm so excited for my first mac tweet! The subject is sugar and spice, with fruit. This macaron is made of 75% almond and 25% peanut flour. The lime curd is made from mexican lines from my tree, and the chili powder is california chili. These were made specifically for mac tweets, but I have made another batch before. These are still maturing in my fridge, but if they are anything like the last batch, the first thing you taste is lime, followed by peanut and a hint of spice.


This flavor combination is inspired by thai food, with the chili, lime and peanut flavors.

This is the first inhabitant of My Pink Kitchen. My trusty Pink Kitchen Aid Mixer. I had always wanted a stand mixer, however I always thought they were out of my price range. However in 2004 I was at Robinsons-May department store and spied one for $188! I had never seen one under $200! I quickly went to purchase it and rushed to the counter. The clerk, trying to be helpful, commented, "You realize this is the Pink one...several people have come up here thinking this was a white one and didn't want it because it was pink." I timidly replied that I had been searching and searching for "the pink one" forever and was quite happy. He rang me up and the rest is history.

The Origins of My Pink Kitchen

So how did I end up with My Pink Kitchen? Well it was all random luck. I have loved the color pink, ever since I was a small child. Almost everything I have, I have in Pink! (That may be an exaggeration). I never ever imagined that I would one day end up with My Pink Kitchen. However when we purchased our house, I lucked out. A vintage tiled kitchen, untouched by time...in a previous owner's favorite color...PINK! Unfortunately, or fortunately for my husband, the bathroom was redone in a classy blue and white scheme, but I do see origins of Pink tile peeking out behind the new blue tiles.
